For people trying to get the most out of a chicken:

First check ads for oven stuffer chicken roasters, lots of times you can find a buy one get one sale (put one in the freezer)

salt and pepper inside and out. cut an oinon in about four peices, carrot cut in half, stalk of celery in half.  put inside.  If you have dried or fresh herbs, use them. Don't forget the garlic. Now roast. (This is very important, rise out the roasting pan, get it all and add to the stock pot.)

when done, take all the meat you can off the bone .This is meat for dinner, with leftover for chicken salad for lunch.

Take all the bones, skin, everything inside the chicken , veg. herbs, put in a lg. pot, cover with water, about 2 inches over. Don't add salt .  Don't forget the roasting pan juices. Put on the back burner and boil for an hour or so. Now you have stock.

I have to go now , time for me to start my dinner. I will continue later
